Stanley brings Cantonese dining to Manly Wharf

Chef Louis Tikaram has opened a waterfront Cantonese restaurant at Manly Wharf, bringing dim sum, live seafood and a purpose-built Peking duck oven to the harbour.

Stanley opened at Manly Wharf in August 2026, following its original restaurant at Brisbane’s Howard Smith Wharves. The Sydney outpost takes its name from Hong Kong’s coastal Stanley Bay — a fitting reference for a dining room facing the water.

From Brisbane to Manly

At the helm is Louis Tikaram, the award-winning chef whose career includes time at Longrain. His cooking draws on traditional Cantonese techniques, his Fijian-Chinese heritage and Australian produce. The Manly restaurant has a dedicated woodfired duck oven and live seafood tanks, while a substantial dining room looks out over the harbour.

At the table

The menu is built for sharing. Alongside dumplings and dim sum are seafood dishes such as Moreton Bay bug spring rolls, pipis with XO sauce and live seafood prepared to order. Peking duck is a particular focus, roasted in the restaurant’s custom oven and served with the familiar pancakes and accompaniments.

It is a restaurant for a longer lunch or dinner by the water, whether you order a few dishes for the table or settle in for a banquet. Menus change seasonally, so check the latest selection before visiting.
